Taylor Design was approached by the Client to reconfigure a self-serve buffet line into a staff-served buffet line using existing equipment to improve operational flow and minimize food contamination. Upon performing observations of traffic flow patterns, interviewing diners and staff, and review of obsolete equipment conditions and finishes, it was recommended that the entire 12-year old Dining Room be upgraded. The plan was reimagined to optimize both diner experience, kitchen flow, and staff operations. The new 6,500 square-foot remodel includes all new finishes, furniture, equipment, furniture, a single server line designed with flexibility for both staff-serve and self-serve food shield options, and primary/secondary server stations to allow for redundancy during high-volume service.
